I haven't tried this but someone told me about this and it sounds like it will work.  Figure out where your feet are going to be -- sit in the boat and have someone else find out where your feet will be -- form the Romex on the outside of your boat where you want the foam to be.  The Romex will hold its shape so you can transfer that shape to a piece of foam.  This will make the foam a little bigger than you want, which isn't a bad idea since it will compress.

When putting in foot foam make sure you attach rope or webbing through the foam so that you can pull it out if you need to, otherwise you'll have a devil of a time.

In my Rush+ I've done a flat foam bulkhead 5 or 6 inches in front of where my feet go.  I then put together a piece (left and right) for my feet to wrap around.  This wedges in against the bulkhead -- I have size 11 feet so the toes have to be wrapped forward instead of straight out to the side.  This also gives me a small piece to pull out and modify instead of having to remove a large section.

Romex is electrical cable used in houses, it's plastic covering 3 wires.  You can find it at Orchard Supply Hardware and purchase it by the foot.
