Compactor bags would be another option to dry bags. I think it's a great idea as long as it is not "critical" items like sleeping gear or certain clothes. Should work well for kitchen and such. I was just on a grand trip where we used ActionPackers for kitchen gear. They are tough, OK to sit on, and don't waste as much space as an insulated cooler (wasted space being since you don't need the insulation). You could also add weather stripping to those.
