easy one-can/bag ingredients. Make it all the night before (cook pasta in water you heat up for dishes) and load into Gal zip locks. Dirties a few dishes though. This was my favorite lunch and a welcome break from the usual offerings.

You could also ask an outfitter for examples of their meal plan... they seem to have a pretty good idea about what's going on.
