First bucket to rinse heavy scraps, keeps the wash bucket from quickly becoming too soiled to be effective. Next bucket is wash, third is rinse and last is to sanitize with bleach added. Hot water for bucket #2, warm for #3. Works well if you have a large group. Three bucket would probably work well with small group, less than 5 people for sure. Dan
