Hike to Wolf Creek Falls in Del Rio ( http://appalachiantreks.blogspot.com/2011/05/wolf-creek-falls.html ), pray for rain and paddle Big Laurel, good fishing on that creek also. There is an old road bed that runs alongside the entire creek. Hop on the AT for a little hike, my kids always thought it was cool the trail was 2000 some miles long. Hike to Lovers Leap overlooking the French Broad, short but decent elevation gain. Max Patch?
