Class II-III will be the Nantahala in western NC (both are dam controlled and will run). Sec. IV of the Chattooga (Class IV) is runnable even at low water (and it will most likely be low, since it's natural flow).  
All these rivers are within 1.5 hours of each other.  If you're a hair boater then look at the Green in N.C. (class V). On your way back you might hit up the Nolichucky gorge in Northwestern N.C. (class III) if it's running.
