you can easily do 5 days of daytrips in central florida - rock springs run, juniper springs, alexander springs, ickentucknee, rainbow springs - the list goes on.

multi day - the suwannee

or hit the florida panhandle - I think there is a new trail that connects St jo's to St' andrews to the national wildlife refuge (can't remember its name)

or hit the rivers further over toward Pensecola - supposed to be blackwater rivers with sugar sand beaches - multi day campers possible - its been on my list forever...

you can also multi day trip in the everglades - only down side is you have to carry all of your drinking water.

It would be hard to go wrong in Florida - just so long you are okay with flatwater.
