Try warming up with a couple  'textbook' off-side rolls at the start of the day.  Then pick several spots down the river to do it again.  Really 'think' about grabbing water with your paddle at the start, righting the boat with your hips, and finishing head out last looking down at the water.  Get friends to critique your form or just bite the shoulder strap of your PFD to make sure your head doesn't come up.  With noseplugs you can see if your paddle dives.  Use your hand to check blade angle if you feel it's 'slashing'.

Then flip in deep easy wave-trains along the way and try off-side first.  Do this a couple weekends in a row and you'll probably forget which way was 'off'.  Muscle memory is half the battle.  
i do this with all my flatwater tricks regularly.
