	I'd put her in a XXX or a Dom41.  Go with the XXX if you want to buy used, but the Dom41 if you want to go new.  I taught my girlfriend in a XXX.  It was hard at first (especially for her rolling), but now she's got a really sweet boat and not looking to upgrade.  These boats will both be decent river runners at her size too (a little edgey though).  YOu may also look into an EZ.  At her size though it will be a much better river runner than play machine. If she wants total play, then maybe a Jib or and Evo?
