There are sections of the Provo suitable for beginners -- below Deer Creek but above the Olmstead diversion, and below Bridal Veil. There's also Spanish Fork with a mellow section south of Provo off of route 6. The Weber's been mentioned -- after we melt what little pack's left in the hills, water will be depended upon irrigation request (for the Hennefer to Taggart section). They're rumored to start in Late April early -May this year.
I wouldn't consider Chalk Creek appropriate as access is limited by private land, and the quality of white water is marginal at best (brushy banks would also make re-entry difficult).
If you can make it a weekend clinic , the daily sections of the Green River (below Flaming Gorge or outside of Green River Utah) and or the Colorado would offer a much better experience.)
