Often the boat manufacturers are using their team paddlers to estimate weight ranges, and they are using their regular weight.

If you are a little over, it might be fine, but recognize that that will change how the edges engage and how the stability works. Generally speaking you'll find yourself with more ability to snap the boat around, but you'll lose stability, speed, and overall handling as a tradeoff.
