Educate me on edges

I've been kayaking for 3 years now and every boat i've owned has had edges. I used to paddle in the early 90's in the age of the overflow, crossfire, etc.... when boats didn't have edges at all.

What I am trying to figure out is how to effectively use the edges. Are there times when you engage the bow edge as opposed to the stern edge? Someone mentioned on the new Burns having to engage an edge when coming off a drop. Why would you need to do that? I am more concerned with riverrunning and not playboating.

When can edges screw you up? When people talk about "catching an edge" is it caught on the current or a rock?

Sorry for the stupid questions I just need some clarification.
